I started with a big base of veggies: chopped up Persian cucumbers, a couple different types of tomatoes: yellow cherry tomatoes and red heirloom tomato. Slow cooked carrots with Hazelnuts and mozzarella by @ottolenghi and @noorishbynoor This recipe appeared in the Guardian in January this year but I first spied it on Oksana's @oksanaritchie feed a couple of days back. She shared a couple of tips, especially regarding size of the roasting tin, which helped me get this right. The recipe is straightforward. Peel and halve slender carrots, toss them with olive oil, thyme, salt and crushed garlic and lay them to roast at a low temp for 90 minutes. Shallots, regular small onions in my case, also went in to roast. For the final 10 minutes, a drizzle of maple syrup, with the oven on high, to help the carrots caramelize. To finish, a squirt of lemon juice, fresh mozzarella, basil and toasted Hazelnuts. Marinated Roasted Peppers & Burrata with Basil Cashew Sauce so good & easy... Pro Tip: replace the water burrata comes in with warm water 10-15 min before serving and it'll get creamier. Ingredients: •4 bell peppers (cut up, drizzled with olive oil, salt and pepper). •1 burrata ball. •16-20 basil leaves. •1/3 cup chives (about 9 stalks). •1/4 cup cashews. •1 tbsp white balsamic vinegar. •1 lemon zest. •3 tbsp meyer lemon olive oil. •1/4 tbsp olive oil. •1/4 cup parmigiano reggiano. •Seasoned salt to taste (pegs). Directions: 1.- bake your peppers at 400 for 25-30 min flipping halfway through. 2.- place your chives, basil, lemon olive oil, cashews, white balsamic, salt and pepper in the food processor and process until smooth. 3.- add in parmigiano, lemon zest and remaining olive oil. Process again. 4.- once the peppers are cool enough to handle, peel them. This is an optional step. 5.- Add in half the sauce to the peppers, cover in foil and marinate 1-2 hrs. 6.- serve the peppers with the rest of the sauce, burrata on top, add some olive oil, more sauce, flaky sea salt and pepper.
