Balanzoni are typically tossed with butter and sage. It's name derives from "la maschera" of Bologna named Dottore Balanzone. Back in 1600, il Dottore "the Doctor"; commonly known in Italian as Dottor Balanzone was a commedia dell'arte stock character, one of the vecchi, or "old men", whose function in a scenario was to be an obstacle to the young lovers. He is comically inept.
