smoky miso mushroom pasta! happy friday! I was craving pasta like crazy this entire week, so I decided to make this amazing miso mushroom pasta yesterday! I just have to say that any type of pasta or noodles will forever be the BEST comfort food out there, and this big bowl of creamy pasta was definitely the perfect way to end the week ️ smoky miso mushroom pasta • 1 box pasta of choice (I used @eatbanza rigatoni) • 1 chopped onion • 4 minced garlic cloves • 2 cups sliced cremini mushrooms • 1/4 cup @sperofoods smoked cream cheese • 1/2 block silken tofu • 1/4 cup vegetable broth • 1 tbsp miso paste • salt and pepper to taste - boil water and cook pasta according to directions - to make the sauce, blend together cream cheese, tofu, vegetable growth, and miso until smooth - in a pan on medium heat, sauté onions, mushrooms, and garlic for around 5 minutes - pour the sauce into the pan with a few spoonfuls of pasta water and heat for 1-2 minutes until slightly thickened - take the pan off the heat, season with salt and pepper, and toss in the cooked pasta hope you all have a fantastic weekend!! . . . . . #vegan #plantbased #pasta #rigatoni #mushrooms #miso #dinner #healthypasta #healthyfood #healthyrecipes #healthydinner #healthymeals #healthyeating #healthylifestyle #veganpasta #veganfood #veganrecipes #vegandinner #veganbowl #veganuary #highprotein #dairyfree #yum

tempeh tikka masala tacos! happy monday! I know it's not taco tuesday yet, but I just couldn't wait to share these amazing tempeh and cauliflower tikka masala tacos! the tempeh filling is made with @mayakaimalfoods vegan tikka masala simmer sauce, so these tacos are super flavorful and so easy to make! this meal only took me around 20 minutes to prepare, and it was definitely one of the best meals I had all week tempeh tikka masala: • 1 block of tempeh • 1 small head of cauliflower • 1 jar @mayakaimalfoods vegan tikka masala • salt to taste • whole wheat tortillas • pickled onions • plain vegan yogurt • cilantro - cut cauliflower into small florets and crumble tempeh into bite sized pieces - add to a pan with a splash of water or oil and sauté for 5 minutes - pour in @mayakaimalfoods vegan tikka masala and simmer for another 5-10 minutes until the cauliflower is cooked through - fill the tortillas with the tempeh and cauliflower mixture and top with pickled red onions, cilantro, and yogurt hope you all have a great start to the week! . . . . #vegan #plantbased #tacos #tikkamasala #tempeh #cauliflower #vegantacos #dinner #healthydinner #healthyfood #healthymeals #healthyrecipes #healthylifestyle #healthyeating #veganfood #veganmeals #vegandinner #veganrecipes #veganuary #yum

Happiness is a hot bowl of soup on a cold winter day With the mercury dropping outside nothing nourishes you more than a great bowl of soup. This is my favourite winter meal, a staple in my home for over 30 years Vegan Minestrone Soup A splash of olive oil 1 onion diced 1 package @beyondmeat (or ground meat of choice) 1 c. Potatoes diced 1c. Carrots diced 2 stalks celery diced 2 medium zucchini diced 2 C. cabbage 1 Green pepper diced 1/4 C Rice or noodles 1 large can diced tomatoes 1 can mixed legumes/beans 8 C. or more water Basil, oregano, thyme, parsley,bay leaf, salt, pepper to taste Sauté onion in olive oil add @beyondmeat sauté and then drain excess oil. Add water, seasoning and all of the vegetables, rice, beans, and can of tomatoes (and any other veggies u like) Simmer until all veggies are cooked, stir when needed. Great fresh or frozen!! Here’s some daily meal inspo if you feel like you need a bit of motivation to switch things up in the kitchen. Pancake cakes for breakfast I usually make these by eye now, but if you want to make them here’s a base pancake mix recipe for them 1 cup oat flour, 1 tsp baking powder, 2 tbsp coconut sugar, 1/2-3/4 cup oat milk, 2 tsp apple cider vinegar - Mix together the dry ingredients first, then add wet and gently combine.

(basil, oregano, chili powder, turmeric, garlic, cumin…) ️ I use healthy cooking methods such as: grilling, broiling, roasting, slow cooking, and steaming. ( I never fry anything). ️ I stick to healthy fats: Avocado, nuts, olive oil and peanut butter. ️ I’m always looking for new healthy recipes.
